these muffins are probably the best banana bread/muffins i’ve eaten. hands down. gluten or gluten-free diet, these are my favorites.
the picture, below, shows a recipe i split into mini-muffins. the printable recipe i’m giving you is for a standard-sized muffin tin that yields 12 muffins. but play with the recipe and make a loaf out of it (probably double the baking time) or make mini-muffins and cut off about 1/4 of the baking time. i hear rachael ray saying, “eyeball it.” i do that, often, when i bake. i just keep an eye on the thing baking until it “looks” like it’s browning. then i stick a toothpick in. if it comes out clean, we’re all done.
