Pecan Pumpkin Bites

note: you can swap out the nut of your preference (raw: walnuts, almonds, etc)
  • 1 cup packed dates (pitted)
  • ½ cup pecans (preferably raw and unsalted)
  • ½ cup unsweetened shredded coconut flakes
  • ⅛ tsp ground cloves
  • ⅛ tsp ground nutmeg
  • ¼ heaping tsp ground cinnamon
  • 1Tbs water (optional. use this if you find that your dates are too dry and not blending well.)
  1. blend dates and pecans in food processor until crumbly
  2. add coconut flakes and spices
  3. blend until dates become more dough like
  4. if still crumbly, at this point, add the water until dates become more smooth
  5. roll batter into balls and store in air tight container in refrigerator
