banana [walnut] muffins – gluten free and paleo

these muffins are probably the best banana bread/muffins i’ve eaten. hands down. gluten or gluten-free diet, these are my favorites.

the picture, below, shows a recipe i split into mini-muffins. the printable recipe i’m giving you is for a standard-sized muffin tin that yields 12 muffins. but play with the recipe and make a loaf out of it (probably double the baking time) or make mini-muffins and cut off about 1/4 of the baking time. i hear rachael ray saying, “eyeball it.” i do that, often, when i bake. i just keep an eye on the thing baking until it “looks” like it’s browning. then i stick a toothpick in. if it comes out clean, we’re all done.

my favorite banana [walnut] muffins

if making as a loaf, cook for 35-45 minutes. if baking as mini-muffins, bake for about 15-20 minutes.
Ingredients
  • ¾ tsp baking soda
  • ⅛ tsp sea salt
  • ¾ cup almond meal/flour
  • ¼ cup coconut flour
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 cup pureed banana
  • ⅓ cup honey
  • 2 Tbsp melted coconut oil (or olive oil)
  • optional: ⅓cup chopped walnuts
  • optional: top with dairy and soy free chocolate chips
Instructions
  1. Preheat oven 350F
  2. grind ¾ cup almonds into almond meal
  3. in bowl, combine dry ingredients
  4. in another bowl, mix eggs, vanilla, honey and oil
  5. add dry ingredients to wet and mix well
  6. fold in walnuts
  7. equally distribute batter into greased or lined muffin tins
  8. optional: top muffins with chocolate chips
  9. bake for 25 minutes or until a toothpick comes out clean
  10. allow muffins to cool on cooling rack
  11. enjoy!

    We made these for the first time today to freeze and have all week. After breakfast, there was not a crumb left! Loved it! I added cinnamon, yum!
